Filipino Custard Cake


Fact: I can eat a whole plate of leche flan. Well, you may not be surprised with all the deserts I've been making (and eating!). There's something about the smooth custard and the sweet syrup that is just heavenly.

My daughter loves leche flan too. I introduced her to leche flan while eating at a local Goldilocks restaurant. She was hooked! Whenever she'd see leche flan at home or at a restaurant menu, she would ask for it. She takes after her mom! :-)

Leche flan plus angel cake = custard cake = sweet tooth heaven! Custard cake for me is very Pinoy. You can find this anywhere - from small bakeries outside your house to the fine restaurant uptown. This has been a pleasant dessert ever since I was little.

Off to Google again for a good custard cake recipe. Found just what I was looking for at a website by a Filipina based in the US. I browsed through her other recipes and observed several things: (1) She's not a professional food writer. She writes very straightforward - which I like. I'm not into food literature that much - Food is meant to be eaten, not to be read. (2) She has loads of tips! I read through all of these to make sure I follow her recipe correctly. I'm glad I did :-), and (3) I like that she includes the reaction of her family whenever they try the food she serves. She's very honest with this - she even mentioned her husband does not like a cake she made.

Filipino Custard Cake
from Kusina ni Manang

Manang's recipe is for a 9X13 pan cooked bain marie. I have a problem with this because my 9X13 pan fits snugly into my oven so there's no way I can cook this on top of another pan.

I had to divide the recipe into 8" round pans. A 9X13 pan recipe will make 3 8" round pans. I made 2 8" pans so I had leftover leche flan. I used up the whole cake batter though.

First, make the caramel. In the 8" round pans, place 1/2 cup sugar each.

Heat on top of low heat until the sugar melts. Be careful not to burn the sugar like I did, oops!

Prepare the custard mixture.
  • 4 whole eggs
  • 1 can condensed milk (14 oz)
  • 1 can evaporated milk (15 oz)
  • 1 tsp vanilla

Add all the ingredients in a blender.

Pulse 3 times for 3 seconds each.

Do not overblend or your mixture will form bubbles. Set this aside.

Make the chiffon cake
  • 5 eggs
  • 1/4 tsp cream of tartar
  • 2/3 cup cake flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 tbsp oil
  • 6 tbsp milk
  • 1 tsp lemon extract
  • 1 tbsp grated lemon rind
  • 1/2 cup sugar

Separate the eggs. Add the cream of tartar to the egg whites and set aside.
Whisk the flour, baking powder and salt in a bowl.

Make a well in the center and add the wet ingredients including the rind. Add the sugar on the sides of the bowl.

Using a mixer, start beating from the center to the side of the bowl. Mix until well blended.

Beat the egg whites until soft peaks form.

Gently fold the egg whites into the batter with a spatula.


Assemble the cake.

In the pan with the solidified caramel, pour the custard into the pans. In my case, I used 1/3 of the mixture on each pan (so I have leftover 1/3).

Pour the cake batter on top of the custard.

Bake at 325F bain marie for 45 minutes. Bain marie is a method of cooking via a steam bath. Place your cake pan in a larger pan with water. The water has to be 1/2 - 1 inch high.

The cake is done when a toothpick comes out clean.

Nigella Lawson's Chicken with Lemon and Rosemary


Powerbooks was on sale last week. I went with my daughter to buy a new book for her. She decided on a Fancy Nancy book. While I decided on two - Nigella Lawson's Nigella Fresh and Ina Garten's Barefoot Contessa Family Style.

The books are great! I've been enjoying them since I got them. The recipes are very simple and the ingredients are available here. I've been dying to try one of Nigella's chicken recipes because they look so easy. Here's my first try:

Chicken with Lemon and Rosemary
Recipe by Nigella Lawson from Nigella's Fresh

  • about 1 kilo of chicken
  • 2 tbsp of dried rosemary
  • salt and pepper
  • 1 red onion
  • juice of 1 lemon
  • 6 tbsps of olive oil

Marinate your chicken with all of the ingredients.

Put everything inside a freezer bag. Give it a good shake. Place it in the fridge for 4 hours or overnight.

Preheat oven to 425F. Line your baking pan with aluminum foil. Place your chicken and all of the marinate on the baking pan, making sure you distribute them evenly. Cover with aluminum foil.

Bake for 30 minutes. Remove the aluminum foil cover and return to the oven. Bake for another 20 minutes.

Check for doneness and serve warm.

Fish Fillet with Cheese Sauce

Making packed lunch is a very tedious task. Imagine cooking before going to work. You cook, then you pack, then drive or commute and after that you work for 8+ hours. Exhausting!

But really, where can you get homecooked meals at work? The office vendor sells "carinderic" (read: oily and barely touching the plate) food mostly loaded with salt and MSG. First, the food is bitin that I think I need 3 servings to get full. And second, the serving size is not worth the price. Grrr!

Thank God Yummy released a Baon Specials issue! The recipes are easy to make and takes little prep and cooking time. Another good thing is that the recipes do not have a long list of complicated ingredients. The things you need are readily available in your pantry!

Time to cook and pack your lunch! Tip: Cook the night before you go to work. Or if you're like me who work at night, cook in the morning. This way, you're not too sleepy to cook or too tired to work after.

Fish Fillet with Cheese Sauce
from Yummy Magazine

2-3 pieces of fish fillet (I use cream dory)
2 tbsps flour
2 tbsps butter
1/4 cup milk
1/2 cup water
1/2 cup quick melting cheese
2 tbsps cheese spread
salt and pepper
spanish paprika

Cut each fish fillet into 3 pieces

Season with salt and pepper on both sides

Heat your olive oil in your frying pan. I use nonstick pan so I don't have to use too much oil.

Fry your fish for about 3-4 minutes on each side.

Prepare your cheese sauce.

In a sauce pan, put your flour and let cook for about 2 minutes. Be careful not to burn your flour.

Add the butter and cook until it melts.

Slowly add the milk and water while stirring continously.

Add the quick melting cheese and cheese spread. Let the cheeses melt. Keep the cheese sauce warm.

Pour the sauce over the fish and sprinkle with paprika.

Serve with some greens for a healthy meal!

Mini Spinach and Mushroom Quiche

Brunch heaven!

What to do with spinach? I have spinach that I need to use immediately! Then I have salami, also needs to be consumed asap. Then some mushrooms.

I had to think what food have I enjoyed that has spinach and mushrooms? Quiche of course!

Starbucks used to have spinach quiche that was just heavenly. Too bad, I think they discontinued this product. I don't see it in stores anymore :-(

Off I went to Food Network to get an easy recipe for quiche. I was imagining a dish of quiche then I saw this recipe for mini-quiches! So cute!!! Here is the link, Mini Spinach and Mushroom Quiche. Not all ingredients are readily available in our town or in Manila (Turkey Bacon? Fontina cheese?) so I had to substitute.

Here's my version:

Mini Spinach and Mushroom Quiche
Adapted from the Food Network

  • olive oil
  • 1 shallot, minced
  • 1 small can of mushrooms, sliced
  • 1 cup spinach
  • salt and pepper
  • 1/4 cup milk
  • 6 whole eggs
  • pinch of nutmeg
  • 5 slices of salami, chopped into squares
  • cheddar cheese, grated or sliced


Heat a nonstick pan with a spray of olive oil. Add the minced shallot and mushrooms. Season with salt and pepper.

Turn off the heat and add the spinach. Stir just until the spinach is wilted.

In a bowl, beat the eggs. Add milk and nutmeg. Season with salt and pepper.

Preheat the oven to 375F. Spray or brush your muffin pan with olive oil.

Pour the egg mixture into the muffin pan, filling about halfway.

Distribute the mushroom-spinach mixture evenly.

Top with salami.

Then the cheese.

Pour the rest of the egg mixture.

Bake for 20-25 minutes or until the top is golden brown and the quiche has risen.

Serve hot or warm.

Healthy Eating: Tuna Farfalle

I'm one of the least fashionable people I know :-) but I love looking at pictures of well-dressed people. I indulge in a long list of bookmarked fashion blogs.

One of the blogs I frequent is Jenni Epperson's. Hers is a mix of fashion, family, food and shopping. I'm amazed at how much work she does and she still manages to look well and cook well. I loved it when she started her Meatless Fridays series. Her recipes are very easy to make with ingredients that are readily available. Plus, she encourages her readers to use healthy and organic ingredients. I'm trying her recipes recently (and will try switching to organic later :-) ).

She has a new website now which has its own section for food!

Here's my version of Jenni Epperson's Century Tuna Farfalle

Tuna Farfalle

  • 1 can Century corned tuna
  • 1 cup farfalle
  • fresh basil
  • Parmesan cheese
  • Chili powder


Cook pasta according to package directions. Reserve 1/4 cup of pasta water.

Heat tuna. Season with chili powder.

Add pasta, fresh basil and pasta water. Cook for about 3 minutes.

Put in a plate and generously top with grated parmesan cheese.

Serve warm.
